Arugula and Green Apple Salad

:)Spring is a great time to take advantage of the fresh & local greens. This is a quick, easy and good salad. If you haven’t tried arugula, it’s a nice change with a wonderful peppery flavor.

1 bunch fresh arugula, washed and dried
2 Granny Smith apples, pealed and sliced thin (julienne)
1/2 – 3/4 c pecans, chopped
1 c (or more) baked chicken, coarsely chopped

Combine first 3 ingredients in a salad bowl and mix with dressing. I always add the chicken on top after I have plated the salad. If you want to add a little cheese, I used some buffalo mozzarella but next time I will try shaved Parmesan. Enjoy!

Note: This dressing makes more than enough, just use what you need and refrigerate the rest for later use.

1 TBS mayonnaise
1 tbsp. sugar
1 1/2 tsp. paprika
1 tbsp. Worcestershire sauce
pinch salt
1/4 tsp. dry mustard
1/4 tsp. pepper
3/4 c. canola oil
1/4 c. wine vinegar

Mix all dressing ingredients in a jar and shake, or bowl and mix well.
