Roasted Potato Fries

Potatoes
Olive oil
Salt & Pepper

Place roasting pan in oven and preheat oven to 425-450 degrees

Slice potatoes lengthwise into approximately ½” square slices. Mix potatoes with olive oil, salt and pepper.

Place potatoes in single layer on the hot pan.

In 15-20 minutes, check on the potatoes to see if the are browned on the bottom side which is on the pan. If yes, turn the potatoes and continue baking. If no, continue baking until they are browned.

Put back in the oven for another 20 – 30 minutes until nicely browned and depending on how crispy you like your fries.

NOTES!
– You can speed up or slow down the actual cook time by turning up/down the temperature
– If you have more than one layer of potatoes on the pan, your potatoes are likely to be less crispy
– I use this same cooking method for most any mixture of roasted vegetables … onions, peppers, carrots, cabbage, broccoli, cauliflower, potatoes, beans …
